Directions

Cheesecake Factory Stuffed Mushrooms
Ingredients
1 pound baby bella or portobello mushrooms
2 garlic cloves, minced
2 green onions, minced
2 tablespoons olive oil, divided 2 tablespoons butter
1/4 cup Madeira wine
1 tsp lemon juice
1 cup Italian-style seasoned breadcrumbs 1/2 cup Parmesan cheese, grated, plus extra for topping
1/2 cup mozzarella or fontina cheese, grated
Salt and pepper, to taste
Fresh parsley, chopped, for garnish Instructions
Preheat the oven to 350°F (175°C).
Remove the stems from the mushrooms and wash them. Pat the mushrooms dry with paper towels.
In a heavy skillet, heat the remaining olive oil and melt the butter. Add minced garlic and green onions, sauté for 2-3 minutes until fragrant.
Add the mushroom stems to the skillet and cook for 1 minute. Remove from heat. Allow mixture to cool and transfer it to a mixing bowl.
Stir in wine, Italian-style seasoned breadcrumbs, Parmesan cheese, lemon juice, and mozzarella or fontina cheese. Mix until well combined. Set aside while you arrange the mushrooms.
Brush the mushrooms with olive oil and place them in the cups of a mini muffin tray.

Sun dried tomato & Spinach biscuits
Ingredients
▢2 tsp olive oil
▢1/2 cup (80 g) onion, diced
▢2 handfuls (60 g) baby spinach, rough chop
▢1 large clove garlic, minced
▢6 eggs, lightly beaten
▢1/2 cup (55 g) sun dried tomatoes, rinsed off + patted dry
▢1/2 cup (105 g) cottage cheese
▢3/4 cup (84 g) almond flour
▢1/4 cup (30 g) coconut flour
▢1/2 tsp baking powder
▢salt + pepper, to taste
▢1/2 cup (56 g) shredded mozzarella
▢1/4 cup (25 g) shredded parmesan
Instructions
Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.
Heat the olive oil in a large skillet over medium heat. Add in the onion and sauté for 2 minutes. Next, add in the spinach and garlic and sauté until just wilted – 1 minute. Then remove from the burner, transfer to a paper towel lined plate and set aside.
In a large bowl, add in the eggs, spinach mixture, sun dried tomatoes, cottage cheese and mix together until incorporated. Next add in the almond flour, coconut flour, baking powder, salt, pepper, mozzarella, parmesan and mix until combined. Then, use a large scooper and transfer about 1/4 cup to the baking sheet. Gently press down and top with a little more mozzarella. Bake for 22-25 minutes or until golden brown on top.

Taco Burgers
1 pound ground meat
1 (1 ounce) packet taco seasoning
5 slices pepper Jack cheese
5 hamburger buns, split
¼ cup sour cream, or to taste
¼ cup salsa, or to taste
1 cup chopped fresh cilantro
1 tomato, sliced
1 avocado, sliced
½ onion, sliced
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
Mix ground beef and taco seasoning together in a bowl with your hands. Separate mixture into 5 equal portions. Form into patties.
Cook patties on the preheated grill for 5 minutes. Flip, top with pepper Jack cheese slices, and continue to grill until no longer pink or to desired doneness, about 5 minutes more. An instant-read thermometer inserted into the center of a patty should read at least 160 degrees F (70 degrees C).
Spread sour cream and salsa on buns. Add patties; top with cilantro, tomato, avocado, and onion.

Carne Asada al Cilantro
½ cup dark Mexican beer
¼ cup avocado oil
½ white onion, cut into large wedges
1 cup fresh cilantro leaves
salt and pepper to taste
2 pounds meat skirt steak
Directions

Directions
Prepare the grill for indirect cooking.

⅔ cup milk
¼ cup butter
3 cups diced cooked ham
1 cup shredded sharp Cheddar cheese
Directions
Preheat the oven to 400 degrees F (200 degrees C).
Melt butter in a nonstick skillet over medium heat. Pour in beaten eggs; cook in hot butter to desired degree of doneness, stirring constantly. Remove from heat.
Unroll crescent dough and place rolls on an ungreased 12-inch pizza pan with points facing the center. Press seams together and press up sides of the pan to form a crust.
