ASPARAGUS CARBONARA (2–3 servings)
A spring twist on classic carbonara, creamy and no cream 🌱

🛒 Ingredients
• 200 g pasta (spaghetti or rigatoni)
• 150 g asparagus
• 2 egg yolks + 1 whole egg
• 50 g pecorino cheese grated
• 30 g parmesan cheese grated
• 80 g guanciale
• salt to taste
• black pepper to taste

👩‍🍳 Procedure
1️⃣ Trim the asparagus, slice the stems and keep the tips whole. Boil in salted water for 5 minutes.
2️⃣ In the same water cook the pasta and reserve some cooking water.
3️⃣ Cook the guanciale in a pan until crispy, then add asparagus and sauté for 2–3 minutes.
4️⃣ In a bowl whisk eggs, pecorino, parmesan and pepper into a creamy mixture.
5️⃣ Drain pasta al dente and add to the pan, mix off the heat.
6️⃣ Add the egg mixture with a splash of pasta water, stir quickly to create a creamy sauce without scrambling.

😎 Finishing and serving
Serve immediately with extra pecorino and pepper. The sauce should be silky and creamy, not dry. Avoid direct heat after adding eggs.

• 250 g ricotta cheese
• 1 egg
• 50 g grated cheese
• 80 g breadcrumbs
• chopped parsley to taste
• salt to taste
• pepper to taste
• 500 ml tomato passata
• 2 tbsp extra virgin olive oil
• 1 garlic clove

👩‍🍳 Procedure
1️⃣ In a bowl mix ricotta, egg, grated cheese, breadcrumbs, parsley, salt and pepper until soft but workable.
2️⃣ Shape into small meatballs using slightly wet hands and set aside.
3️⃣ Heat oil with garlic in a pan, add tomato passata and cook for 10 minutes over medium heat.
4️⃣ Gently add the meatballs to the sauce, cover and cook on low heat for about 15 minutes, turning carefully.
5️⃣ Check consistency and simmer a few more minutes uncovered.

• 500 g asparagus
• 3 eggs
• 200 ml cooking cream
• 100 g grated parmesan cheese
• 100 g smoked cheese (scamorza), diced

• Extra virgin olive oil to taste

👩‍🍳 Procedure
1️⃣ Trim the asparagus, remove the tough ends and boil in salted water for 8-10 minutes, then drain and cool.
2️⃣ In a bowl whisk eggs with cream, parmesan, salt and pepper until smooth.
