Cutlet Tricks 😃

Tip 1 - The best approach is to mix different minced meats: pork, beef, and lamb.

Tip 2 - I don’t recommend adding milk to the mixture. Dilute the minced meat with warm boiled water until it reaches the consistency of thick sour cream.

Tip 3 - Use only the egg yolks in the mixture.

Tip 4 - The more onions you add to the mixture, the tastier the cutlets will be.

Tip 5 - Adding bread to the mixture isn’t necessary. Try incorporating any vegetables: cabbage, potatoes, carrots.

Fry the cutlets in hot oil on a very hot pan. If you like, you can use crushed breadcrumbs or flour as a coating. You can shape the cutlets with wet hands and drop them straight into the hot oil. And if you dip them in beaten egg white, they’ll turn out especially tasty and juicy.

Chocolate Kefir Cake "Fantastica".

A simple yet unusual recipe for a delicious cake. Anyone can make it. Definitely give it a try!

Ingredients:
For the batter:
● Kefir or ryazhenka (a sour milk drink) – 300 g
● Sugar – 1 cup
● Eggs – 2
● Vegetable oil – 2 tbsp
● Cocoa – 2–3 tbsp
● Baking soda – 1 tsp
● Flour – 2 cups

For the cream:
1) Option – sour cream cream
● Sour cream – 400 g
● Sugar – 1 cup
● Butter – 200 g

2) Option – custard cream
● Eggs – 2
● Sugar – 300 g
● Flour – 2 tbsp (heaped)
● Milk – 400 g
● Vanilla sugar – 1 sachet
● Butter – 200 g

For topping – cookies, or chocolate, or nuts

Peanut Sherbet

1 cup peanuts
1 cup milk
3.5 cups sugar
80 g butter

Step 1
For a rich dessert, use the fattest milk you can find. Pour the milk into a pot and add 3 cups of sugar (keep 0.5 cup for later). Stir constantly, set over low heat, and simmer for 30 minutes.

Step 2
Toast the peanuts in a skillet until golden, so the skins come off easily.

Step 3
Now tackle the reserved sugar: spread it on a dry pan to make caramel, letting the sherbet take on a brown color. Add the caramel to the milk-sugar syrup.

Step 4
Cook until done. On average, the sherbet will be ready after about an hour of cooking. Stir in the butter.

Step 5
The mold for the homemade sherbet can be plain or decorative. Line the bottom with parchment paper and sprinkle the nuts. Then pour in the sherbet and move it to a cool place to set.

Quick Cake

I want to share a recipe for an incredibly tasty, yet super easy and quick-to-make cake.

For the layers, mix 400 g sweetened condensed milk, 2 eggs, 2 tsp baking powder, and 1 cup all-purpose flour to make the batter. Then place about 2 tablespoons of batter on parchment paper and spread it evenly. I usually end up with 6–7 layers; they bake in the oven one by one until lightly golden, while I work on the cream.

Whipped cream pairs perfectly with these layers: whisk 500 ml of 35% heavy cream with half a cup of powdered sugar.

When the layers have cooled, spread the cream generously over them. Drizzle the top with melted chocolate (about 100 g is enough). It looks gorgeous if you decorate the cake with almond petals.

Cutlets Under a Fur Coat

Ingredients:
- Ground turkey 1 kg
- Chicken eggs 2
- White bread (crusts removed) 0.5 loaf
- Mayonnaise (for filling + drizzle) 2 tbsp
- Milk 120 ml
- Salt, Pepper
- Hard cheese 250 g total (50 g for filling; 200 g for topping)
- Butter 50 g
- Tomatoes 2
- Vegetable oil

Preparation:
- Mince breast and thigh meat 1:1. Rinse, pat dry, and grind.
- Soak bread in milk, grind, mix with mince. Add eggs, mayo, salt, pepper.
- Mix well; this batch yields ten cutlets.
- Cut cheese and butter into sticks for the filling.
- With wet hands, shape mince into a ball, flatten to a circle. Place cheese in center, top with butter. Seal edges.
- Fry cutlets in vegetable oil until golden (few minutes per side; not fully cooked).
- Transfer to a baking dish. Pour the frying oil over the cutlets.

Minced chicken patties with cauliflower and bell pepper

Ingredients:
- Chicken breast – 600 g
- Cauliflower – 300 g (half a small head)
- Bell pepper – 1
- Hard cheese – 70–80 g
- Eggs – 2
- Sour cream – 2 tablespoons
- Flour – 2 tablespoons
- Green onions – small bunch; parsley, salt and ground pepper – to taste
- Vegetable oil for frying

Instructions:
1) Cut the chicken fillet into small cubes; finely dice the bell pepper. Break the cauliflower into florets and boil in salted water for 5 minutes, then drain and cut the cauliflower into small cubes. Add chopped greens (green onion and parsley).

2) Grate the cheese on a coarse grater, then add the eggs, sour cream, flour, salt and ground pepper.

3) Mix everything well, cover, and refrigerate for 1 hour.

4) Remove from the fridge. Moisten your hands with cold water and shape medium-sized patties. Fry them in vegetable oil over low heat until golden on both sides.

5) Transfer the finished patties to a saucepan and cover with a lid.

Beautiful Vegetable Casserole

Ingredients:
- 1 small zucchini
- 1 large carrot
- 2 tomatoes
- 3 eggs
- 100 g sour cream (15%)
- 50 g hard cheese
- 3 garlic cloves (optional)
- salt

Preparation:
1. Slice the zucchini and carrot into thin ribbons with a peeler. Cut the tomatoes into rounds.
2. Roll each ribbon of zucchini and carrot into a small roll. Arrange the rolls in a checkerboard pattern in a 20×20 cm baking dish.
3. Place the tomato rounds along the perimeter. For the filling, whisk the eggs with sour cream, then add salt and the cheese.
4. Pour the filling over the vegetables. If you like, sprinkle with finely chopped garlic on top. Bake in a preheated oven at 180°C for 25–30 minutes.

For the béchamel sauce:
- 4 tbsp all-purpose flour
- 1 L milk

- 1 tsp nutmeg

New potatoes in a sour cream sauce

Ingredients:
- 500 g new potatoes
- 3 tablespoons sour cream
- 50 g cheese
- 4 garlic cloves
- 1 bunch dill
- 1 teaspoon vegetable oil
- 1/2 teaspoon flour
- salt and pepper to taste

Preparation:
1. Peel the potatoes and lay them in a greased baking dish in a single layer.
2. Press the garlic and finely chop the dill.
3. Make the sour cream sauce for baking: whisk the salt, pepper, and flour into the sour cream to thicken it. Add the dill and garlic. Mix everything.
4. Pour the sauce over the potatoes and bake in a preheated oven at 180°C for 30 minutes.
5. Ten minutes before it's ready, sprinkle with grated cheese and return to the oven.
6. Serve the baked potatoes in sour cream warm, sprinkled with herbs.

Chicken in a Cylinder

2 baguettes
2 small chicken breasts
1 onion
1 clove garlic
400 g mushrooms
cream (we used 10% in a 200 g carton)
1 tomato
100 g cheese
sour cream, salt, pepper, greens

Grind the chicken fillet.
Finely chop the onion and sauté it in a pan.

Slice the baguette crosswise into several pieces to form cylinders, and gently remove the crumb.

Mix the chicken mince with the sautéed onion, add garlic, salt, and pepper, mix well, and stuff the baguette with this filling.

Finely chop the mushrooms, add the cream, and simmer briefly.

Fill the cylinders with the mushroom sauce, top with a tomato wedge with sour cream, and sprinkle with grated cheese. Bake in a 220°C oven for 30 minutes.
